Abstract: This study was to evaluate the potential of the flying gurnard as a very nutritious fish in Ghana. One pelagic fish species in Ghana, the flying gurnard (Dactylopterus Volitans) was selected for study. Proximate analysis indicated high protein content (26.5), microbial analysis showed that the fish is microbiologically safe. Textural analysis depicted excellent textural characteristics comparable to the most cherished red fish (Centroberyx affinis). Yet the flying gurnard is underutilized
