Abstract: | A research was conducted on the microbial, trace metal and aflatoxin contamination of iced kenkey produced and sold in some selected markets including the Madina, Agbogbloshie, Mallam-Arta and Ashaiman. The work revealed the presence of some enteric pathogens such as E. coli, presence of lead and aflatoxins in some iced kenkey samples analysed. In view of this, a team of Research Scientists from CSIR-Food Research Institute in collaboration with the Environmental and Health Unit of La-Nkwantanang Municipal Assembly organized a one day training workshop on safe handling and preparation of iced kenkey for Fante kenkey producers, iced kenkey millers and producers as well as vendors in and around Madina market on the 18th of November 2013. The training which was financed by CSIR-Food Research Institute was aimed at improving the quality and safety of iced kenkey sold to the public. The training was held at the hall of the Social Welfare School located in Madina. This training workshop is expected to be carried out in the other markets as well |
