dc.description.abstractHoney had been a health benefit over centuries. Interestingly, regular intake of honey had been attributed to good health, but often its intake as a drink had often be very difficult for some individuals and often preferred as an addendum in other drinks. In addressing this challenge a product development consisting of honey and milk was conducted. On successful completion of the product development, a delicious honeyshake drink was developed. A training workshop was then conducted for SSBrothers, Accra, to take up the production technologies for commercial production of delicious honey shake for the local market. This training workshop served as a platform for research to meet industry in an attempt to break the trend where research finding often ends on shelves. The training workshop for delicious honeyshake drink was held at CSIR-FRI from 8th - 10th June 2011. Delicious honeyshake drink is a product of the CSIR-FRI developed for SSBrothers Accra, for commercialization on the local market. It was developed from pure honey and powered milk for consumption by the populace, especially health conscious consumers as the drinks provides a wide range of nutrients and vitamins. The training was geared to equip trainees on basic technical information on the underlining principles, methods and techniques involved in the processing of delicious honeyshake drinks with further emphases on formulations. In addition, it was to assist trainees to gain knowledge on Food Safety and Quality Assurance, Good Manufacturing Practices and Hazard Analysis and Critical Control Points in general processing of drinks. Further, it was a platform to inform trainees that the CSIR-FRI has the potential of assisting processors and entrepreneurs to produce high quality processed and concepts drinks and juices and other fruits and vegetables for the populace and international markets. The 3-day training workshop consisted of the principles, concepts and acquires technical skills in Delicious Honeyshake Drink Production, Food Safety and Quality Assurance, Good Manufacturing Practices and Hazard Analysis and Critical Control Points. The training was 30% theory and 70% hands-on practical demonstrations on delicious honeyshake drink production processingen_US
