Abstract: This report shows the value chain for Kenkey, a traditional fermented maize product in Ghana. The value chain analysis (VCA) in this report includes key actors and processes. In addition, the analysis uses the value chain information to build Strength, Weakness, Opportunity and Threat (SWOT) and GAP analyses for existing and re-engineered AFTER products. This information will increase the competitiveness, reduce the costs and improve the market share of Kenkey. The bottom line of this VCA is that the overall profitability of Kenkey will be improved
